The way you're working it with it is exactly what it's supposed to do when set to Speed and Pitch. That video shows Varispeed being able to slow something down using speed only without affecting the pitch. When Varispeed is set to speed only, it still affects both the tempo and the pitch. It works the same whether PDC is on or off. Do you happen to have PDC on? I think that may be one cause of the pitch shift.
